Food Authenticity Seminar Series: Application of NMR Spectroscopy in Wine Control

Thursday, May 25, 2023 11:30to12:30
Zoom

Nuclear Magnetic Resonance (NMR) spectroscopy is an established analytical technique in food science, with many applications in research, process and quality control. The presentation will introduce the state of the art of NMR applications in official wine control. Principles of quantification of ingredients including determination of site-specific stable isotope ratios (deuterium) on the one hand and the progress of non-targeted approaches on the other hand will be discussed. Quantitative Deuterium NMR spectroscopy, also called SNIF-NMR (Site Specific Isotopic Fractionation) has been implemented for official control purposes 30 years ago and allows the detection of chaptalization. Due to technical improvements also 1H-NMR spectroscopy was established in wine control. Non-targeted approaches rely on the comparison of NMR spectra of actual samples with those of reference samples in data bases, which are representative for the specific food commodity, here wine, by sophisticated multivariate data evaluation workflows. Data acquisition techniques and data preparation procedures, but also challenges and hurdles in cooperation and harmonization are highlighted.

The event is virtual and will take place over Zoom.

About the speaker

Dr. Carsten Fauhl-Hassek

Dr. Carsten Fauhl-Hassek is a food chemist and works at the department for Safety in the Food Chain of the German Federal Institute for Risk Assessment (BfR) in Germany. Since 2021 he is temporally assigned as co-head of the department, in addition to heading the unit Product identity, Supply chains and Traceability. He has special expertise in authentication of food and feed, wine analysis and appreciation, method development and validation (ring trials). Dr. Fauhl-Hassek is also head of the Senior Expert Office for the Import Control of Wine and designated expert for the European Wine Databank for stable isotopes. Since almost 20 years he is national delegate and expert in the sub-commission of analysis of the International Organization of Wine and Vine (OIV). Dr. Fauhl-Hassek is involved in national as well as international research projects and leading expert in non-targeted analysis employing different analytical techniques such as NMR spectroscopy. In addition, in the past he was involved in the risk assessment of mycotoxins and responsible for the National Reference Laboratory for Mycotoxins in Feed and Food.
